Crunchy Cafe Latte Vanilla ALL NATURAL Peanut Butter Protein Bars

Sandy Tocci

Tired of flipping over EVERY single bar at the health food store wondering if its actually “good” for you and whether or not those fats or carbs or proteins are really right or healthy?! I FEEL YOU and actually ran into this problem last week when I was STARVING, forgot my food and had to stopped at the store to grab some BCAAs---- I was STUCK and ended up not getting anything because I was LOST! SO to avoid this, I put together these “healthier” protein bars that I made from scratch and took like 20 minutes to prepare {YES… they need to refrigerate overnight or for at least 3 hours so plan ahead}.

Crunchy Cafe Latte Vanilla ALL NATURAL Peanut Butter Protein Bars
{obviously not all these ingredients are all natural but YOU can take it to whatever level you want}

  • 2 scoops Café Latte Shakeology (or protein of choice--- contact me in you would like to try Shakeology for FREE)
  • 1 scoop Vanilla Shakeology (or protein of choice)
  • 2 C. oats (I used instant oats)
  • 1 C. back to Nature Sprout and Shine Cereal
  • 1 C. coconut milk (unsweetened)
  • 1/2 C. natural creamy peanut butter
  • 1 Tbsp. Cinnamon
  • 1 tsp. Cocoa Powder
  • 1 Tbsp. Stevia

  • Combine all ingredients in a bowl and mix well. Press into an 8×8 pan. Chill for at least 3 hours. Cut into 12 pieces.

TIP TIP TIP-------- portion control! Just like anything else, you can’t eat the whole thing because its “healthier”. Be cautious of your intake and enjoy it!

Sandy's Mug Pie

Let me see your hands up HIGH if you are like 95% of our population that is PACING the freaking kitchen at 8PM looking for something yummy to eat?!?!!! ME ME ME x10000000!!!! I mean like FOR REAL... I can be good ALL freaking day but when it hits around 8PM, I want something and I want it NOW! SOOOOOOOOOO you can thank me later but here is one of our FAVE night treats and its really not that guilty at all. Try it out, share it and let me know what you think. ENJOY!

  • 1 Scoop Chocolate Shakeology (or protein of choice)
  • 3 Tablespoons Water
  • 1 Egg White
  • Dash of Baking Powder
  • Splash of Sugar Free Liquid Coffee Creamer (I use Coffeemate Italian Cream---- aka YUMMY)
  • 1 Teaspoon Peanut Butter
  • 1 Tablespoon Sugar Free Cool Whip

  1. Grab a large mug and mix first 5 ingredients really really well.
  2. Drop in peanut butter but do NOT mix!
  3. Cook in microwave for 60 seconds but STOP at 30 seconds, mix once and put back in for remaining 30 seconds.
  4. Remove, top with cool whip and any other little toppings you'd like. (we used crushed graham crackers here BUT you can do cereal, fruits, syrups, etc etc)

All in all, this is a DELICIOUS treat that you can have without feeling guilty! Do not overdue it on the added ingredients and watch your portion sizes because thats when calories/fats/carbs can really add up quick. Experiment and have FUN!

Much love, peace, happiness and BALANCE

Sandy's Cauliflower Pizza Crust

Sandy's Cauliflower Pizza Crust

Are you looking for a lower-carb pizza crust without sacrificing the taste?!?!! Well HERE YA GO! It may take a couple times for you to perfect the recipe or shape or cooking times {this was my 5th time making this style pizzza} BUT its SO worth it. You get to INDULGE without feeling completely guilty! Of course it doesn't fully replace an AMAZING pizza but it'll do the trick. Try it out, share it and let me know what you think. ENJOY and bon appetit!

  • 1.5 bags Trader Joes Cauliflower Rice
  • 1 egg white, lightly beaten
  • ¼ cup parmesan cheese
  •  ¼ cup whole wheat bread crumbs

  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. In a large bowl, dump the FROZEN (does not need to be defrosted) cauliflower in and cook in microwave for 3-4 minutes or until soft. {does not need to be fully cooked}
  3.  Remove and dump onto two paper towels; top with two additional paper towels and SQUEEZE as much water out as you can. {If you have a cheese cloth, you can use that too. The idea is to remove as much water as you can.}
  4.  Dump back into large bowl.
  5. Add in egg white, cheese and breadcrumbs.
  6. Mix lightly until well blended.
  7. Dump onto baking sheet and form into a circle or square or heart or whatever you feel like forming. DO NOT MAKE TOO THIN! The crust should be about ¼ inch THICK all the way around. Be sure to pack the cauliflower mixture together firmly and evenly, leaving no thin spots where the crust may crack.
  8. Bake for 30 minutes, until the top is dry and golden, then carefully flip the crust over and bake for another ı0 minutes. Use immediately as a pizza crust or allow the flatbread to cool and slice it to use as sandwich bread.
  9. To complete the pizza, add your favorite sauce and toppings and then bake for another ı0 minutes at 400ºF, until the topping are heated thoroughly. Slice and serve hot.

ENJOY! :-)
